The Magic of Apples & Honey

Did you know that apples are a member of the rose family? Along with pears, peaches, and cherries, apples have this nostalgic crisp flavor that is always fresh in the produce aisle year-round. But, paired with honey, a whole new aroma and magical experience are offered. Savory or sweet, apples and honey are worth giving a try.

Sriracha Honey Chicken with Apples

Servings: 2-4

Ingredients:

  • 1 lb. Chicken Thighs
  • 2 Apples, preferably Pink Lady, sliced
  • 1 tbsp. Extra Virgin Olive Oil
  • Juice of 1 Lime
  • 2 tbsp. Honey
  • 2 tbsp. Sriracha
  • 1/2 tsp. each: Salt & Black Pepper

Instructions:

  1. Pat the chicken dry, then season with salt and black pepper. Add the extra virgin olive oil in a pan over medium heat. Add in the sliced apples and chicken to pan-fry until thoroughly cooked, about 20-30 minutes.
  2. In the meantime, whisk together the honey, sriracha, and lime juice.
  3. Turn the stovetop heat up to medium-high, then pour the sauce over the chicken and apples. Keep spooning the sauce over the chicken for 2-3 minutes, until reduced to a glossy sauce. Transfer the chicken and apples to a serving dish, garnish with fresh thyme leaves, and enjoy immediately.

Baked Brie, Apple & Honey Crostini

Servings: 10-12

Ingredients:

  • 1 Baguette, cut into 1/2″ slices
  • 6 oz. Brie
  • 2 Apples, preferably Honey Crisp, thinly sliced
  • 1 Lemon, juiced
  • 1/4 cup Pecans, toasted and crushed
  • 2 tbsp. Honey
  • 3-4 Fresh Mint Leaves, thinly chopped

Instructions:

  1. Preheat oven to 375F. Line a baking tray with parchment paper.
  2. Evenly spread the baguette slices onto the prepared baking tray in a single layer. On each baguette slice, place a thin slice of brie on top. Bake for 5-7 minutes, until brie has melted.
  3. In the meantime, toss together the lemon juice, the thin apple slices, and the thinly chopped mint in a small bowl.
  4. Once removed from the oven, add 1-2 thin slices of apple on each crostini. Garnish with the crushed pecans and a drizzle of honey. Serve immediately.

Crunchy Honey Oatmeal Apple Crisp

Servings: 8-10

Ingredients:

  • 4 Apples, chopped
  • 1/2 cup + 2 tbsp. Almond Meal
  • 1 1/4 cup Rolled Oats
  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 cup Honey
  • 1/2 cup Pecans, chopped
  • 3 tsp. Ground Cinnamon
  • 1/2 tsp. Salt

Instructions:

  1. Preheat oven to 350F. Lightly grease or line a 9×13″ baking dish.
  2. In the prepared baking dish, add in the chopped apples, 2 tablespoons almond meal, and 1 teaspoon ground cinnamon. Toss the ingredients together, then evenly spread out into a single layer.
  3. In a mixing bowl, whisk together the extra virgin olive oil and honey until very smooth. Add in the rolled oats, chopped pecans, remaining almond meal (1/2 cup), remaining cinnamon (2 teaspoons), and salt. Toss together, then pour over the apples to evenly cover them.
  4. Bake for 35-40 minutes, until golden brown on top. Allow the apple crisp to cool for 10-15 minutes. Serve warm with (optional) vanilla bean ice cream or powdered sugar glaze.

Honey Cranberry & Apple Compote Yogurt Parfait

Servings: 2

Ingredients:

  • 1 1/2 cups Yogurt (Greek or regular)
  • 1/2 cup granola (of your preference)
  • 2 Apples, preferably Pink Lady or Fuji, chopped
  • 1 tbsp. Extra Virgin Olive Oil
  • 1/2 cup Fresh Cranberries
  • 2 tbsp. Honey
  • Zest of 1 Orange
  • 1/2 tsp. Ground Cinnamon

Instructions:

  1. In a non-stick skillet over medium heat, warm up the extra virgin olive oil for 1 minute.
  2. Add in the chopped apples to cook for 3-4 minutes, stirring frequently. Add in the honey, ground cinnamon, orange zest, and a dash of salt (to taste). Cook for another 2-3 minutes, or until the apples begin to turn slightly translucent.
  3. Add in the cranberries to cook for another 3-4 minutes, or just before they begin to burst. If needed, you can de-glaze the pan with 1 tablespoon of water.
  4. Remove the skillet from the heat and allow the compote to cool completely.
  5. To assemble, add a layer of yogurt, a thin layer of granola, then a layer of the compote. Repeat until all ingredients are used. Serve immediately.
