#1 Mango Lassi Popsicles
Perfect for: The girls’ night hostess serving up some Instagram worthy summer snacks
Ingredients
1 cup cubed mango
1 cup yogurt
¼ cup water or milk, your choice
¼ teaspoon cardamom powder
½ teaspoon saffron strands
3-4 tablespoons honey
Blend cubed mango until smooth. Add in the remaining ingredients, blend until smooth. Pour into molds leaving ¼” of room to allow for expanding. Freeze for 8 hours or overnight before enjoying.
#2 Toasted Coconut Latte Popsicles
Perfect for: The teacher who deserves a tropical getaway but will settle for Starbucks and sunshine at home
Ingredients
½ cup unsweetened coconut flakes (toasted @ 325 degrees)
3 cups coconut cream, divided
¼ cup maple syrup, divided
½ teaspoon vanilla extract, divided
¼ teaspoon pink Himalayan salt, divided
1 cup cold brew coffee
Blend all ingredients until smooth making sure to set aside your divided ingredients. Pour mixture halfway up the molds and freeze. Add remaining divided ingredients and blend for about 1 minute until smooth. Fill molds the rest of the way with coffee mixture. Add popsicle sticks and freeze for 3 hours or overnight.
#3 Strawberry Greek Yogurt Popsicles
Perfect for: The “cool mom” who wants something healthy for the kids without them knowing it
Ingredients
1 lb. fresh strawberries, rinsed and hulled
2 cup vanilla-flavored Greek yogurt
Sprinkling of brown sugar, to taste
Blend or process strawberries on pulse until they resemble a jam with a few bigger pieces in the mix. Pour into a mixing bowl with yogurt and brown sugar and fold together. Spoon into molds and freeze overnight.
#4 Blueberry Lemon Pudding Popsicles

Ingredients
1 cup heavy cream
1 cup milk
1 tablespoon sugar
1/2 cup lemon juice
3 tsp lemon zest
3 cup blueberries
Whisk together lemon juice, lemon zest, sugar and cream. Place blueberries into molds leaving room at top. Carefully pour lemon mixture into molds over top of blueberries. Freeze for 6 hours or overnight.

Ingredients
2 oz. Bacardi Light Rum
3 oz fresh lime juice
3 oz. simple syrup
12 fresh mint leaves
3 cup ice cubes
1 lime, peeled and sliced thinly
Blend all ingredients (except the lime slices) until smooth and resembles a slushy. Place a lime slice in each empty popsicle mold before pouring in the mixture into the molds. Add Popsicle sticks and freeze for 8 hours or overnight. Of course, please enjoy responsibly and store out of reach of little one’s hands.
