As much as I love guacamole and anything that involves avocado, I was hesitant to give avocado toast a try—it just seemed like a strange combination. However, having several avocados on the kitchen counter rapidly approaching the past-ripe phase made me decide to go for it. I’m so glad I did! It has become one of my go-to breakfast / brunch dishes. It is delicious and keeps me full for hours. Below is a basic recipe, but feel free to add additional toppings to your toast like a fried egg, arugula, seasoning(s), fruit or cheese. Be mindful of the calories involved with these additional toppings… adding several of these could easily make your breakfast have as many calories as you need for the entire day.
Avocado Toast (serves 1)
INGREDIENTS
- 2 slices Ezekiel bread (flourless, but not gluten free, bread made from sprouted grains)
- 2 slices bacon
- 1 small avocado (or ½ of a large avocado)**
Toast Ezekiel bread, cook bacon*, slice avocado. Spread avocado on your toast and layer bacon plus any additional toppings you prefer.
Serve with fruit and a large cup of coffee and enjoy!

**When choosing avocados, squeeze to make sure they are not too firm but not too soft. The skin should be almost black. Peel back the cap at the top of the avocado, if it is green, it is ripe. If it is brown or black, the avocado is overripe.
