These Pumpkin French Toast Bites are sweet, perfectly spiced, and will simply melt in your mouth! Perfect for fall weekend brunches or busy school mornings as they are easy to make and made a bit healthier.

Ingredients:
- 4 Thick Slices of Bread, preferably brioche or artisanal soft bread
- 2 large Eggs
- 1/4 cup Pumpkin Puree
- 1/3 cup Milk
- 1/2 tsp. Pumpkin Spice
- 1/2 tsp. Ground Cinnamon
- Pinch of Salt
- Maple Syrup, for serving
- Pecans (optional), for serving
- Pumpkin Seeds (optional), for serving
Instructions:
- Preheat your griddle or nonstick pan to medium high heat. Lightly grease with olive oil or butter.
- In a large bowl, whisk the eggs, pumpkin puree, milk, pumpkin spice, cinnamon, and salt together.
- Slice the bread into thick equal cubes, about 1″ in diameter.
- Quickly toss the bread into the egg mixture to coat, then place on heated griddle.
- Cook 2-3 minutes, until browned on both sides.
Serve with crushed pecans and pumpkin seeds. Drizzle with maple syrup and enjoy warm!
