The Fluffiest Cottage Cheese Pancakes

Are you tired of flat pancakes? Because, same. After weeks of recipe testing, here are THE Fluffiest Cottage Cheese Pancakes that are high in protein, made in a blender and will keep you fueled through your morning!

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Ingredients:

  • 1 ½ cups Cottage Cheese
  • 1 cup All Purpose Flour
  • 2 large Eggs
  • ¼ cup Granulated Cane Sugar
  • 1 tsp. Baking Powder
  • ¼ tsp. Fine Sea Salt
  • Unsalted Butter, for cooking
  • Maple Syrup, for serving

Instructions:

  1. In a high-speed blender, combine the cottage cheese, flour, eggs, sugar, baking powder and salt. Pulse until very smooth. 
  2. Place a griddle pan over medium heat. Once hot, grease with the butter. 
  3. Use a large ice cream scooper to add ¼ cup batter per pancake onto the greased griddle. 
  4. Cook for two to three minutes until you see air bubbles and edges are set, then flip. Cook for another two to three minutes, until golden and fluffy. 
  5. Enjoy warm with fresh fruits and maple syrup!
