Raspberry Linzer Heart Cookies

Anyone who knows me knows I use any holiday to make festive treats. From the new year on into Valentine’s Day, these cookies are the perfect treat to pass along to family and friends to show them how much you care. This specialty cookie takes a little extra effort but is well worth the patience and time! Traditionally a European delight, I used an adapted recipe that does not require ground nuts, making them simple and delicious! And can we talk about the raspberry jam filling? They’re adorable, delectable and festive for your Valentine’s Day this year. Enjoy!

 

Ingredients

2 sticks butter, softened to room temperature

⅔ cup + 3 tablespoons powdered sugar

1 egg yolk, beaten

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

¼ teaspoon salt

⅔ cup raspberry jam

 

Directions

  1. Preheat oven to 325°F. Beat butter and ⅔ cup powdered sugar in a mixing bowl. Carefully add in egg yolk and vanilla extract. Once fully combined, add in flour and salt. Carefully wrap half of the dough in plastic wrap and refrigerate.
  2. On a floured surface, roll out half of the dough to ½ inch thickness. Using two different sized heart cookie cutters, cut equal portions of base and windowed cookie parts. Place onto cookie sheet and bake for 10 to 12 minutes. While the first batch is baking, repeat the heart cutting process with the other half of dough.
  3. Once all dough has been baked let completely cool.
  4. When ready, spread raspberry jam onto base cookies and top with windowed cookies. Dust with powdered sugar and serve!
