Ingredients:
- 1 3/4 cup all-purpose or cake flour
- 1/2 tsp. kosher salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 cup olive oil
- 1 cup granulated cane sugar
- 2 eggs, preferably at room temperature
- 2 tsp. vanilla extract
- 3/4 cup buttermilk
Instructions:
- Preheat oven to 350F. Lightly grease and line a 9″ cake pan with parchment paper.
- In a large bowl, mix together the flour, salt, baking powder and baking soda.
- Using a hand mixer or stand mixer, combine the olive oil and granulated cane sugar to beat on medium high speed for 2 minutes.
- Continue beating as you add in one egg at a time. Then, reduce to low speed to add in the buttermilk and vanilla extract.
- On low speed, gradually add in the flour mixture to mix until just incorporated (be careful not to overmix the batter).
- Pour the cake batter into the prepared cake pan, then bake for 40-50 minutes, until a toothpick inserted into the center comes out clean.
