It is easy to increase your intake of fresh vegetables and enjoy low calorie treats during the summer. Great prices and great tasting vegetables can be found at local farmer’s markets and some of you are lucky enough to have family and friends with gardens. Tasty, easy and good-for-you are all packaged in the following summer salsa recipe. My husband found this recipe and as usual, I had to put my twist on the recipe. You can serve this with whole grain chips or put your own twist on the recipe.

Twisted Summer Salsa
• 1 1/4 pounds diced tomatoes
• 1/4 cup sliced green olives
• 1 bunch sliced green onions, (I think purple onions would be nice too!)
• 1/4 cup Harry & David Pepper and Onion Relish
• 1 tablespoon red-wine vinegar
• 4 teaspoons minced fresh oregano (I think you need more)
• 1/4 teaspoon salt
• 1 teaspoon cracked pepper (you might want to reduce this if you aren’t a pepper fan)

Alisa Fisher says:
Garden Wraps
Every summer when the garden is producing fresh veggies we make wraps. We saute fresh squash ( yellow, zucchini, patty pan) bell peppers, & onions in a pan with olive oil. I usually season with ground sea salt, fresh ground pepper, and some season all. They are great on a whole wheat wrap with chopped fresh tomato, avocado, sour cream and cheese. The great thing about these wraps is use your imagination. I have made it with ground turkey, or whatever I have coming out of the garden. Great recipe to use up all the squash coming out of the garden this time of year!

Alisa, That sounds wonderful . . . I am going to try that soon. I’m always looking for ways to include avocado also! Thanks so much for sharing this idea!
Paige Reeder says:
We have lots of tomatoes at this time of year, as well as cucumbers coming in. I make a very simple salad of tomatoes and cucumbers chopped up as fine or coarse as you wish with some feta crumbled on top and balsamic vinegar added in for good measure. Throw in some chopped basil from the garden as well. Super easy and fast.

Thanks Paige, that sounds wonderful. Fresh and easy . . . this time of the year we have no excuse do we?
